Homemade applesauce


Look at all those apples!!!  Yummy!!  
These are my Fuji apples I got from Azure Standard.

I will only use Fuji or Gala apples to make my applesauce.  Why?  Well, to my family, they are the best tasting apples!!  I don't even have to add sugar!


This year I made my applesauce without peeling my apples.  Best decision EVER!!!!!!

All I did was core them.  Then I put them in the food processor.  I dumped the processed apples in a stockpot and heated them up.  I also added cinnamon to taste during this step.


I then went about packing them in quart jars and putting them in the oven on warm.  I did not put the lids and bands on them.





Here they hung out until I was ready to can.  I did all of my apples this way (18 quarts in all)!  Then I heated my water to boiling after I washed it.  I processed my jars for 25 minutes in a hot water bath.

So yummy and not near as much headache as peeling all those apples!!

Homemade Pancake mix

My kids love pancakes!  I have always hated making them, just for the fact that I only make a batch at a time.  Well, after a little it of work, I finally have the perfect recipe to make a bulk batch of pancake mix.  

Whole Wheat Pancake Mix
Ingredients:
8 cups flour
1/2 c sugar
3 T baking powder
1.5 T of baking soda
2 t salt

Mix all ingredients together and store.  This will make enough for a half gallon mason jar and 1 batch of pancakes.

To make one batch of pancakes you need:

2 c pancake mix
1-1/2 c milk
1 egg
2 T oil.

Stir together and cook.

If you want to do 1 serving of pancakes, you need:

2/3 c pancake mix
1/2 c milk
1 small egg
2 t oil

Homemade Fudgecicles

     Who doesn't like fudgesicle?!  These were my nemesis growing up!  These were on of the things I did have to forgo when we started to eat healthy!  It is amazing all the crap they stick in these things.  Well, look no further!  Here is an awesome recipe, and it is super easy to make!!

Homemade Fudgesicles

2/3 cup maple syrup
1/2 cup unsweetened cocoa
2 t vanilla extract
1 cup + 2 T plain yogurt
1 1/4 c milk



You will also need a popsicle mold and popsicle sticks.


Put all the ingredients in a bowl and mix!  Told you it was easy!!




Pour into your mold.



Put them in the freezer to hang out for about an hour.


Pull them out and put the popsicle sticks in them.  Put back in freezer and allow to harden.  Enjoy!!

Homemade granola

I finally found a granola recipe that is not only easy to fix, but also very yummy!

Granola
1 c honey
1 c brown sugar
1/2 c olive oil
1/2 c coconut oil
1 T vanilla
2 t cinnamon
2 T maple syrup
10 c oats
2 c flour
2-3 c each unsweetened coconut
                  flax seed
                  raisins


1st you want to heat the first seven ingredients until melted.  If you need to melt down your coconut oil, just put it in a pot of hot water and it will liquefy.  Don’t worry, it will turn back into a solid soon!

In a bigger bowl, you want to put your oats, flour, coconut, flax seed, and raisins and stir them up.


Then you will add the melted ingredients and stir until mixed well!


Put in baking dishes and  bake in the oven at 350 degrees for 10-15 minutes.  Put on counter to cool and enjoy!!


We don't buy cereal anymore, so this has been a really nice treat on Sunday mornings when we are trying to get ready for church and I don't have the time to fix eggs or pancakes!
